Low Carb Cheese Chips - SUPER EASY

I have to share these!  These chips take only a minute to make and actually are crispy and have a great chip texture and CRUNCH.  They also hold up well to salsa and other dips.   I am starting to eat these all of the time because of how simple they are to make (and how delicious they are).  You can do it with pretty much any kind of cheese, but cheddar tastes pretty darn good.

Here's all you have to do.  Get some shredded cheddar and spread it on parchment paper.  This won't work on wax paper- only parchment.


Microwave for 1 minute (more or less depending on your particular microwave settings), and then cut them into little squares and they turn crispy within a minute! 



They taste a little bit like Cheese It's, but they sort of have a corn chip texture.


And they sure do taste good with salsa- and it's so good to know that there are virtually no carbs at all in any of these "chips".

      Yes, just keep playing around with the time. Different microwaves work differently. If it's still greasy and halfway soft, try cooking it for about 10 more seconds...if it is still soft, cook another 10, and so on until it looks about right. I had to play around with it before I got it just right too. They will become very nice and crispy, like a taco shell!
