Finnish Style Meatloaf

I found a recipe for low carb meatloaf that sounded delicious...unfortunately, I'm not pioneer woman and can't afford to put Greyere cheese and three different kinds of meat into my meatloaf, so I made my own version of the recipe.   It ended up tasting wonderful.  I have never had meatloaf that didn't have ketchup or breadcrumbs in it, but this made really nicely despite having neither of those things!

Here is how I made it:

2 lb ground beef
1 cup chopped onions and squash, sauteed in 1/2 stick butter
1 cup mozarella
a little parsley
salt and pepper to taste
1/2 cup heavy cream

Mix above ingredients and put into casserole dish and cook at 350 degrees F for 1 hour.  Then top with 1/4 cup mozarella before serving.
