Sausage Balls and Cheesy Flax Crackers
I've been having so much fun experimenting with new recipes that are low carb.
Since I've been on this diet, my sugar cravings have gone down dramatically (just like last time)...it seems like if you deprive yourself of sugar long enough, you really don't feel that "need" for it all of the time, which is actually kind of amazing. That doesn't mean that I don't love sugary things still, or desire it if someone offers it to me...but I don't crave it constantly anymore. And what's really cool about eating more protein and fat than carbs is that you actually feel full longer and don't get hungry all of the time. When I ate more carbohydrate filled foods, I was always searching in the pantry for foods, and never could seem to feel "full". That problem seems to be gone now!
Here are two really yummy snacks that are low carb. The first is Cheesy Flax Crackers. I found the recipe on "Your Lighter Side", and while I don't think they really are crunchy enough to be considered "crackers", they are really delicious to munch on. Plus they virtually have no carbs at all, but they have lots of fiber, vitamins, and protein.

And this morning for breakfast, I made some low carb sausage balls, which were really delicious and only had three ingredients- cheese, pork rinds, and sausage. Yum. I can't say it's full of vitamins and fiber, but it definitely has it's fair share of protein.

They sure do! I need to get some almond flour, but I think I might try making my own. Have you tried that yet? It looks fairly simple. I found some blog posts about how to do it:
