Mock Potato Salad

Guess what the secret ingredient in this mock potato salad is? 



Cauliflower!

It is actually an amazing substitute.  I love this "potato" salad!    One thing I have always hated missing out on when I am on a low carb diet is the potato salads, and now I don't have to miss out. This is (in my opinion) every bit as good!

You can use frozen cauliflower or fresh. Cook it until it's soft enough to get with a fork, but firm enough to hold up.   Depending on your preferences, you might want it firmer or softer-  You can cook it in the microwave or steam it on the stove. 

My recipe had the steamed cauliflower, 4 boiled eggs (chopped), 2 chopped pickle spears (dill), 1 chopped celery stalk, 1 chopped bellpepper, a few tbsp of mustard, and a few heaping tbsps of mayo.  And of course, salt and pepper to taste.  Yummy!
