Low Carb No Bake Cheesecake "Mousse"

This is by far the most incredible tasting desert I have had in a long time!  I just wanted to jump up and down with delight with each spoonful. It was DELECTABLE.    I can't believe something this amazing could be low carb, but it is.

Here is a recipe I found on Food.com.   The recipe calls for 1 8 oz. carton of cream cheese, 1 cup heavy whipping cream, and 1/4 cup splenda.   I don't particularly care for the flavor of Splenda by itself, so I put a few packets of Splenda, and a couple of teaspoons of Xylitol into the mixture.  This really doesn't need that much sweetener!  Here is a link to the recipe.

I decided to put it in cups and eat it that way (instant gratification). I also added on top frozen blueberries from our backyard, and sliced almonds.  It took about 5 minutes from the time I started till the time I was able to eat this treat.

It was heavenly...



Oh and believe me, the kids helped me eat this up quickly!

    I bet if you put all the ingredients except the almonds in a blender your concoction would be like a milkshake. YUMMMY, it looks great!
