Garbanzo Bean Salad
Yesterday, for lunch, I made garbanzo bean salad, and it tasted fabulous. What was even better was that this salad seems to maintain my blood sugar levels. Not just once, but twice I had this salad and my blood sugar levels were lower than they normally are after a meal.
Here is what I threw together for this salad:
1 can garbanzo beans, drained
1 can black olives, drained and chopped
1-2 celery sticks, chopped
1-2 fresh tomatoes, chopped
1/2 cup cheddar cheese, shredded
1 tsp ground red pepper (optional)
salt and pepper to taste
2 tbsp mayonnaise
I would have also added radishes and onions if they had been available at the time.

It was so fresh, crunchy, and delicious.

I've been on a hunt for "lettuce free" salads, and found this. I had it for lunch today! DELICIOUS! Thanks for the idea!
