2 Minute Almond Flour Sandwich Bread
I found a terrific, quick, and easy little bread recipe at Ginny's Low Carb Kitchen blog.

Using a little Wonder bread container (the ones you can get at Walmart for about a dollar), you pour a mixture of almond flour, baking powder and soda, egg, half and half, salt, and coconut oil into it and microwave it on high for about 1 minute. The bread will be soft and spongy at this point, and you put it into the toaster and toast it for a while, then use it for a sandwich bread.
I toasted mine longer than Ginny's, because I wanted it to be firmer...how you toast yours really just depends on how you like it. I put mine directly on the rack of our toaster oven.
It seems like after it cools down and has sat for a while, it tastes much more like bread than when it first comes out and is warm. I used the sweetener in my first batch, but thought it was too sweet. The second time I made it without the sweetener and liked it a lot better.

You can buy almond flour at natural food stores, sometimes at health food stores, and you can also purchase it online... Here is one place you can buy it online.
It is pricy, but it can actually last a while since most recipes like this only call for about 1/4 cup or so.

I wonder if you could bake this...I am not using a microwave anymore....I am assuming you could....
