More Low Carb Ideas
These are too simple to be so good. Just fresh sliced tomatoes (thanks to my in law's garden), and some mozarella, salt and oregano. I cooked it in the oven till the cheese looked bubbly. Yum!
Low Carb Lasagna- we used some more of the Patty Pan squash and made "zucchini" lasagna. It was delicious. Here is a recipe. I made this batch a little watery (I added diced tomatoes and forgot to drain them), but it was still so good we ate it all up very quickly.
I saw a really good looking recipe for mock cornbread muffins, and I decided to just alter the recipe a bit and just make cornbread. Here is my recipe- it turned out really good and would be great with beans:
1 can garbanzo beans (drain & rinse)
3 eggs
1 T. coconut oil
1 tsp. baking powder
1/3 c. almond flour
1 large chopped jalapeno
3/4 tsp. salt
Combine all of the ingredients and blend in food processor till smooth (I added the jalapenos later so the kids wouldn't have to eat the spicy part). Cook for about 20-30 minutes at 350 degrees farenheit. (you can tell when it's done by pressing on the center).

And for a snack the other day, I made some black bean brownies...these are really good, especially if you add a little whipped cream to them! You cannot tell there are beans in this recipe. Here is a recipe using sugar, but I used substitute sweeteners.

Doesn't it look so good and fudgy? You would never guess there were beans in it.

Thanks for sharing all these low carb meals! My husband has Type II diabetes and I could use some inspiration for food to help him get his blood sugar down.

Yum! Love that idea with the tomatoes! I bet you could smear some pesto on it and cover it with mozz and it would be yummy that way, too!
Was the mock cornbread "cornbready" or did it taste altogether different?
The lasagna looks delicious! Man!

The bean cornbread did not taste like cornbread, but it was very good! My first bite I thought I wasn't going to like it because I was trying to compare it to cornbread- then after a minute I realized, that was actually pretty good, and I ended up eating about 3 pieces. We ran out and I actually wanted more. lol The jalapenos really help give it a kick too.
