More of our Meal and Snack Ideas..
My mother in law gave me a whole bunch of beautiful Patty Pan squash from her garden the other day, along with some fresh tomatoes, and I was trying to figure out a way to incorporate them into a meal. I decided to make a casserole, and mixed these things together:
7 eggs
1 can black beans (drained)
2 tomatoes, chopped
2 patty pan squash (you could use any kind of squash or zucchini), chopped and boiled
2 cups cheddar cheese, shredded
salt, pepper (to taste)
and on one side of the casserole, I added chopped jalapenos
I cooked in a casserole dish at about 350 degrees for 30-40 minutes, and it was really good (even better the next day, when it was reheated)! James was a huge fan, and he usually does not like egg dishes. It probably would be good with some sour cream on the side too- wish I had thought of that last night.

This morning, for lunch, we just had a simple tomato soup (canned), with green onions and sour cream...

And I was craving something sweet today, and made some really yummy peanut butter cups, sweetened with Splenda and Stevia, instead of sugar. Here is a link to the recipe (along with a tutorial video!). These are so, so yummy, and they have whey protein in them to make them better for you. And virtually no carbs. They really do taste just slightly different than a Reeses cup.

oh my goodness, Bethany, these photos make my mouth water and it's only 8:00 in the morning! I LOVE patty pan squash. What a wholesome looking casserole. I'm printing out that recipe. That looks fantastic!

Looks delicious! I am so happy when I have my kitchen again (we´re moving... a long process)! I wanna try you pizza substite recipe with cauliflower and mozarella cheese. Please go on posting low carb recipes! Hope you do not loose your motivation. Just some weeks to go!
