Cauliflower Crust Pizza and Coconut Flour Blueberry Muffins
I realized I made a terrible mistake when I made the last pizza- I wasn't aware of it but somehow I had bought a mozzarella cheese substitute instead of the real thing! I know that had a lot to do with the taste and texture not being quite like the one in the blog I linked to before.
I made the pizza crust again two days ago, remembering this time to squeeze as much liquid as possible out of the cooked cauliflower first, then using REAL mozzarella...and WOW did it make a difference.
This crust was not too soft. It actually held together and made 'pieces'. The last pizza wasn't bad, but this one was awesome. James said that out of all of the pizzas i've made in the past (with regular flour crusts), this was by far his favorite. It was like eating a stuffed cheese crust pizza....sooooo cheesy.
There were no leftovers....didn't last long. I'll definitely be making this often.


About a week ago, I ordered some coconut flour online (Amazon.com). I bought 4 pounds of it, along with some stevia.
The first thing I made with it was these coconut flour blueberry muffins (with blueberries from our bushes)....they were so good! I used this recipe and substituted coconut oil for the butter (not because I don't like butter but because I was out!), and used blueberries instead of raspberries. They were super simple to make and very delicious (and filling! They have so much fiber in them that it doesn't take much to make you full). Each muffin is supposed to have about 2 carbs.

I topped my warm muffin with a little butter. mmmm
