Our Low Carb Weekend
I'm so glad that this time (now that I have gestational diabetes again), my husband is being a part of the lower carb diet with me. Last time, I had to make myself separate meals from him and the rest of the family if I wanted to keep on my diet (I did it somehow but it wasn't easy!).
This time, he has decided that he is totally on board with keeping on this diet himself, and is even helping create dishes for me!
Makes life SO MUCH EASIER.
Friday night, our power went out. Fortunately, we had already planned to grill out, so we had grilled chicken and zucchini by candlelight:


For breakfast the next day, I made some 1 minute flax seed muffins. I love these with butter spread on them! Here is the recipe I used for them:
1/4 cup flax seed meal
1/2 tsp baking powder
1/4 of a packet of splenda
1 tsp cinnamon
1 egg
1 tsp coconut oil
Microwave for one minute, then toast in the toaster and spread with butter.

The next day, for a snack, I made the kids and me some ham and cream cheese rollups. They are actually pretty yummy! You have to soften the cream cheese before spreading. It is super simple to make.

Later, as part of the same snack, I made some jalapeno poppers for James and me. Just mix equal parts of cream cheese and shredded cheddar, and stuff the mixture into halved jalapenos and bake for 30 minutes at 350 degrees. Delicious!

For dinner Saturday, I made a low carb version of Shepherd's pie, which I think was so good that even if you are not low carbing, you will absolutely love this stuff. It is out of this world!
I didn't use any exact recipe from anywhere, but took stuff from here and there and created my own version.
This is what I used...
Bottom layer is ground beef, garlic, garlic powder, salt and pepper.
Second layer is shredded zucchini and squash with ground red pepper, salt, pepper, and butter.
Third layer is "mashed potatoes" made from cauliflower. (This is amazingly similar to potatoes!) Once the cauliflower was cooked, I mashed it with a few tbsp of cream cheese, half a stick of butter, 1/4 cup milk, and salt and pepper and spread it over the top.
Then I sprinkled 2 cups of cheddar cheese on top, and some chopped green onions. Cooked for about 30 minutes at 350 degrees. Absolutely WONDERFUL!!!! The kids licked their plates, and we had the leftovers for lunch the next day.

The next morning, I used some of the blueberries from our bushes and added them to flax seed muffins for everyone.

These are so quick and easy to make, and the kids really love them!

For lunch Sunday, along with the leftover Shepherd's pie, James made us some low carb fried Salmon patties, by using flax seed and almond flour in place of regular flour inside them, and frying them in olive oil. They turned out crispy on the outside, soft on the inside- and so scrumptious! Here is a link to a recipe for Salmon patties. James always adds his own spices and usually some srirachi sauce as well, to give it a kick. I love the way he cooks.

James also made dinner for us last night! I don't know exactly how he made this, but he used to eat at a German restaurant that made something called "Schnitzel", and he wanted to show me what it tasted like. Only, he made it low carb. He fried thinly sliced pork with crushed pork rinds for breading- WOW, it was amazing how crispy and perfect these are for breading- with zero carbs.

He topped it with a very spicy sauce, made with red and yellow bellpeppers, serrano and jalapeno peppers (the kids' sauce was made without the peppers), tomato sauce, mushrooms, srirachi sauce, garlic powder, and other spices. This was absolutely fantastic. I have never had schnitzel before and was very impressed with his.

I hope these will give anyone reading some ideas! A low carb diet doesn't have to be so bad after all.

Wow! I love that you are posting your recipes! I too had to watch my carbs during my last pregnancy. Looking back I really should have looked up recipes and stuff. I just ate veg and meat and fats. Now I am low carb for weight loss and I suspect I am pre-diabetic so I seem to do better with low carb anyway. One thing I did every night for "dessert" was to make a shake. I used whole milk, 2 raw eggs (I get my eggs from a family farm so I am not concerned with samonella. If you are leave them out.) stevia and cocoa powder. Blend it up! Yummy! Sometimes I would add natural peanut butter. I also make the one minute muffin but I use 1/4c almond flour or sometimes half and half flax and almond. Try coconut flour. It's pretty good but you have to increase your liquids because it really soaks it up. Thanks for all of the great ideas!

I am drooling right now. My keyboard might short out!! Those pictures are great. I am definitely going to try the Shepherds Pie....sounds so yummy. We like jalapeno peppers and I have thought about making them but they seemed "hard" to make! My kids would love the ham roll ups. Why didn't I ever think of something like that before??? What a good snack. Thanks so much for taking the time to post. I love this blog!

DeDe, you can get the Flax Seed meal at Walmart. I was able to find the Almond flour at a local grocery store (Warehouse Discount Grocery), but I don't know where else you could find it. Possibly a Publix or Kroger would carry it, but they probably do carry it at health food stores too. You can also buy it on Amazon.com. I just bought 4 pounds of coconut flour (bob's red mill brand) on Amazon.com...it ships free!

One question - on the shepherd's pie, do you brown the ground beef before layering it with the other ingredients to bake? I'm going to make this for my family tonight. We're not on any kind of diet, but it sounds so good and healthy, I thought I'd try. (And I'm not going to tell them the cauli isn't potatoes. I want to see if they notice!)

Everything looks so yummy! Will have to start trying some of these. I didn't make that pizza recipe last week because things were too hectic, but I plan to this week. Thanks for the ideas, Bethany! It's great that your hubby is on board. Mine says he feels better eating low carb. Hope yours does, too!
