Lower Carb Meal Plans
I'm going to try to take pictures of most of my meals throughout each week so that I can hold myself accountable to someone, somewhere...not just myself!
Last night, I made Pinto beans with garlic, rutabaga "mashed potatoes" (this was an idea I found somewhere online), and fried okra using egg, flax seed meal, and almond flour (instead of cornmeal). The mashed rutabagas were out of this world good! I just boiled them until they were nice and soft, then added some garlic salt, milk, and butter to them and they were sooooo delicious. I could have eaten a gallon of them. The fried okra wasn't really all that different than your usual cornmeal fried okra- I was surprised! It tasted just as good and crisped up really nicely. And it had so much extra fiber in it because of what it was breaded with.

This morning, for breakfast, I had an omelet with jalapenos and cheese....

And for lunch, we all had lettuce wrapped "BLT's" (with Colby Jack cheese too). They were good!

If you're trying to lighten your "carb load" as well, for any reason- whether to lose weight or to just become more healthy....I hope that these meal ideas will give you some inspiration. It's not always easy to think of meals that don't include bread, pasta, rice, etc. I love to go to websites where they have plenty of ideas along with pictures too.

Try cauliflower sometime. We love to eat it cooked, drained and mashed. Add some butter and a little salt. My husband and kids really like it in place of mashed potatoes. You could add garlic powder and/or cheese to it also. It is hard to find family friendly foods that are easy to make and affordable when you are on a restricted diet. I am getting some ideas from you and I can't wait to try the "Oops" biscuits. Keep the recipes coming!!
