Pita Rolls and Garbanzo Bread

I have gotten back on my low carb Karen Hurd diet to prevent gestational diabetes (hopefully), and this time my husband is on the diet too!   It's nice to have his support because it was really hard doing it and then trying to figure out what to make for him (without craving it myself LOL, I love simple carbs!).  I really need to  be on this diet now, because the last thing I want to do is end up with a 12-13 pound baby to deliver (my babies keep getting bigger and bigger, and Ian was 10 pounds at birth...ouch!).  This diet will help both me and the baby to be happier and healthier.

The other day I was at Walmart and noticed in the deli section that they had these little pita breads that are made with oat bran and and whole wheat- I have never looked at how many carbs are in it before, but I wish I had because they only have about 5 net carbs per pita, which is great!   I wish I had known about this before. This is much lower than a typical pita, which has about 32- 33 net carbs per pita (2 servings of carbs).  I would not be allowed to eat that with my diet, but this bread allows me to do that! 

Here are some delicious pita rolls that we made for lunch yesterday using them (sliced angus roast beef, swiss cheese, ranch dressing, and green leaf lettuce):



They were really good!   I can't really tell much of a difference between these pitas and others.

Since beans are supposed to be my primary source of carbohydrates, I made some more garbanzo bread, using the recipe at Karen Hurd's site .  It tastes so good that I can barely keep it from the kids. Who would have thought that with no sugar at all, you could have such a delicious tasting bread, that also gives you a serving of beans at the same time?  I love smearing this bread with lots and lots of butter.



If you're trying to reduce the number of simple carbs in your diet, these are some good things to try.  I'm sure I'll post more recipes as I get further along in pregnancy.  I just have to get over my severe cravings for sugar!

Some other things we're making a lot lately are 15 bean soup and Chili.   Beans are a terrific source of complex carbs, protein, and fiber, and I am supposed to eat those 3 times a day.  Does anyone have any good bean recipes?

All the recipes are both gluten-free and diabetic friendly. She uses mostly coconut flour and oil and almond meal (available at your local health food store, or Trader Joe's if you have those). These are both very low in carbs. You can order them online if they're not available in your area or are too pricey. The recipes are delicious, especially the chocolate cake one!
