Delicious Garbanzo Bean Flour Bread
I have to share this recipe from KarenHurd.com- I've been trying so
many great recipes from there. Without being able to eat breads and
pastas made with regular flour, it's so nice to find a substitute- and
that is exactly what this garbanzo bean bread is. I never would have
thought that you could make bread with beans before. Amazing.
It is a TERRIFIC substitute for regular bread....very tasty....it is absolutely delightful when it is served warm with some butter. It almost reminds me of cornbread- hard to describe really. I'm going to have to make this often. Every single one of my kids loved it and asked for more.
A slice or two of this bread counts as a serving of beans too!
Here is a link to the recipe.

I recently met someone with celiac disease and she can't have wheat flour. I seem to remember you mentioning how to make the garbanzo bean flour, can you tell me about that again? Or where to find how to make it?
thanks!

You can also make it by cooking it beforehand, as mentioned in this wiki article:

And here are some places you can purchase it online:

Did you use the xanthan gum? It said it was optional. Very long story but my baby was diagnosed with milk protein allergy. I am nursing him and they have taken wheat, milk, soy, corn products, tree nuts, fish, & shellfish out of my diet. He still is having problems. I did have the flour and it looks so good I would like to try it.

Yes, I did use the xanthan gum, although I don't know where you buy it. My mother in law had some extra and gave it to me. I think that without it, the bread is more crumbly and falls apart more easily. But I'm sure it would still taste just as good, depending on whether that matters to you or not.
I hope that it will work for you! Maybe a general nutrition store would have the xanthan gum? Looks like you can buy it at amazon.com for a few dollars:

Thank you so much. I have seen it at Meijer & Rainbow Blossom. I'll have to pick some up. I would rather not have it crumbly. I have had so many breads that are very dry & aren't very good. This one looks moist.

Hubby & I made this bread & it was great. I'm diabetic T2 but can control it w/out meds if I stay away from table sugar & white carbs like wheat - even whole wheat isn't great for me.
We didn't use xanthan gum. The bread sliced well but was a little more crumbly when as we ate it. We don't mind : )
The onion flavor grew overnight. Next time we'll try dehydrated tomato & onion instead.
Thanks a bunch!
