Miracle One Minute Muffin
My friend, Debra, from Days of Grace, sent me this recipe at a moment when I was really craving something "bready".
I made it within 5 minutes of receiving her email. It was so quick, and so easy....and it had a nutty, delicious flavor... I was just so excited about this recipe! See Debra's post here.
Here it is....
1/4 c flax
1 packet of Splenda or Stevia
Microwave 1 min 20 sec. Slice in half and toast, spread with butter.
2.6 carbs
( I tried it with and without the Stevia, and I liked it both ways

1 egg
1/2 tsp baking powder
1 tb coconut oil, melted
1 packet of Splenda or Stevia

The one minute muffin sounds interesting! Could you ask your friend, or may you know: could I substitute for the coconut oil? I am older than you and want to watch my fats; thought about using canola or olive oil. Maybe coconut extract for flavoring?
