Biscuits and Gravy

One thing I try to make about once a week is biscuits and gravy for breakfast.  We all love it. 

A few years ago, though, I couldn't ever make it right.  For one thing, I didn't know how to make biscuits from scratch (I always used bisquick or the frozen biscuits), and I also couldn't ever make the gravy thick- it was thin enough to be straight milk.    James was able to show me how the gravy is made (he really is a good cook, even though he rarely does), and I eventually figured out how to make a biscuit by using the internet, and now I make this stuff all the time.   

If you have ever had the same problem with making gravy (I might get to a tutorial on biscuits some other time), I hope seeing how we make it will help!

First, fry up some good, thick sliced bacon...I use about this much (and I slice the bacon in half so it fits in the pan better):


Have your biscuits cut out and ready while the bacon is frying.  They can rest for about 5-10 minutes before putting them in the oven. 



Take the bacon out of the pan, and let it cool and dry (I like to get it well done, so that it's easier to crumble)...


...pour some flour (a couple of tbsp) into the remaining bacon grease (don't drain off any of it.).  Keep the burner at about medium to medium high...


Stir it in with a fork or a whisk...


Add a little more...


stir it in...


And keep stirring, till it looks like this:


Now, add a little bit of milk...maybe a half cup to a cup...


Stir it in, with circular motions, rapidly:


When it's mixed in well, pour in some more milk:



It will get thick, like this (you can turn the burner down as you add more milk now- about medium low or just low).


Add more milk, and stir it in, till you are happy with the amount you need. 


Crumble up the bacon...


And add the crumbled bacon to your gravy...


Add however much pepper you like...I like a LOT.


Keep stirring, and it should be thick like this. 


Take the gravy off the burner, and let it sit, while you get the biscuits out of the oven. (I'm assuming you put them in the oven already.)


Pour gravy over the biscuits, and enjoy!

I was thinking of making some up today and freezing them so I just have to pull them out of the freezer If I do I will post a tutorial with a recipe and come over to share it with you. I make our gravy by browning sausage, not draining it, adding flour until the sausage is white then adding milk until it becomes as thick as we like it, too runny add more more flour, too thick add more milk I wonder how this will freeze? Off to homeschool then to do some major freezing

I also cannot get the hang of the roux, so I mix the milk and flour in a jar, shake it really hard to make it smooth, then add to the fat in the pan. It is more like a thick white sauce, but once the crumbled sausage goes in, it is really good.
    I think I'll try it with bacon. We LOVE bacon.

      Oh good, glad there is another way besides using bacon fat...I've NEVER fried bacon. I just pop it in the microwave.

      We eat turkey bacon tho, can't imagine frying turkey bacon lol.

Anyhow, we love to eat biscuits with honey from my bees. We make them almost every weekend. I rarely make gravy (it doesn't taste so hot with the honey!)

I grew up making it with sausage though, not bacon ... bet it'd be just as yummy with bacon. We usually use turkey bacon, but I'd definitely have to go with the "real" bacon for this ... turkey bacon doesn't fry well and it wouldn't produce the fat needed for the gravy...

    This reminded me of my first gravy adventures. Whew. Sometimes it was so thick you could slice it with a knife, other times so lumpy I put it in a blender (didn't help) or too runny or what not. My MIL taught me and now I can make any kind of gravy you want. After you get the hang of its you learn other tricks. Its so fun to watch how you take care of your family. God bless you and yours.

    Well color me surprised. I make sausage gravy and never once thought of using bacon...will have to do it since my husbands stomach doesn't tolerate the sausage.     I LOVE biscuits and gravy!! we have this for dinner a lot (with a side of veggies or something). Bacon is my favorite thing to put in it. I also use this method to make "cream of" stock (minus the greese). Using this same flour, butter, and milk you can make any soup that calls for a cream base. It's also great over mashed potatoes or pork chops. ...ahh, but when you want quick and easy, buscuits and gravy are definitely the way to go.
