Apples, Okra, and Watermelon Rinds
Thank you, to those of you who suggested I dehydrate the apples! It was such a great idea. My parents in law had a dehydrator they let me use...I'll be doing many, many apples with it.
I sprinkled them with just a little bit of sugar, and stuck them in the dehydrator.

And my husband had the great idea to use the rinds from the watermelons we got from his parents, for watermelon rind pickles. I've never tried them, but I figured it'd be fun to try.

We have still been getting so much okra from my in-laws!! Every day, they're bringing a large bucket of them. We all love okra, so this has been really nice. I am freezing most of it, but here is what I did with some of the okra:

(The reason they're upside down is so they would seal.)
This is hot pickled okra, and I used one red jalapeno from my mom's garden in one of the jars, and 2 tabascos from her garden in the other two jars. I think they should be good and spicy when they're ready to eat.

And these are some pickles I made, using Mrs Wages pickle mix from the store. They are ready to eat within 24 hours, so the kids love that!

You definitely always make me regret not attempting a garden this year
We've had a garden once since I moved in and it turned out okay considering I picked weeds twice. We got a handful of jalapenos (which I miss now!), a bunch of leaf lettuce, broccoli, watermelon and cantaloupe. We would have had decent carrots if I husband wouldn't have just dumped the packet of seeds in the row lol. They literally all grew together! I'll handle it next time

lol Tiffany! That sounds so funny. I bet you had some really unique carrots!
I haven't really had much of a garden this year either. I've got two very small ones with just cabbage, lettuce, cucumbers, squash, and tomatoes. (most of my veggies come from the in-laws and my parents) I never weed my garden, so it's not too pretty. lol, but it doesn't really matter because the veggies have been growing regardless.

That all looks SO good! You're gonna love the watermelon rind pickles. Cutting that rind is a pain but they really are good.
Lucky for you I don't live closer or I'd be inviting myself for dinner on a regular basis!

We dehydrate lots of stuff. I hope you get hooked on it! We dehydrate yello squash, peppers, apples, maters, etc. It works great! I am curious about the pickled okra. I will keep that recipe for next year. We didn't plant any this year
