Mozarella Cheese Making Finished
The cheese is done, and it turned out great! Tastes slightly different than the kind you'd buy at the store- I'm guessing that is due to the fat content in the milk- I didn't really skim it that much, so there was still lots of cream in it. 
Once the curd has been in the bowl for about 8 hours, drain all of the whey out. Get a pot of water on the stove, and heat it to about 185 degrees.

Once it is there, put in a tiny piece of the curd.
When you pull it out, if it stretches like taffy, it's ready!
Put the rest of the curds in the 185 degree water to soften, then pull out lemon sized pieces and form them into balls.

Then, drop the balls into ice water, to firm them up....
Then, get a quart sized jar with about a pint of water, 1/4 cup salt, and a pint of whey, and add the mozarella balls to the mixture. Let it sit in the fridge for 12-24 hours.
Here are all my mozzarella balls which I sliced in half. I'm planning to use this cheese when I make pizza, to see how it tastes. Since there are no preservatives in the cheese, it won't last long before molding, so I need to make it sometime this week!

When I got mine out of the brine, I rinsed it, patted it dry, then sliced it like this....I think it looks really pretty!

Ooooh...all the wonderful things you're doing with that fresh milk makes me want to try my hand at it, too! That mozzarella looks wonderful...nothing like the fresh stuff! If my husband saw this, he'd surely want to get that 'milk cow' now, LOL! He's been wanting one for a while...and this would send him over the edge!
