Apple Peel Jelly
We are finally on the road to recovery today...I can't wait to be feeling 100 percent again. James and I still have a lingering ear infection in our ears, but we're feeling much better than before! The whole time I was laying there on the bed this week, all I could think of was all of the stuff that needed to be done that I wasn't able to do. It was so frustrating. Today is "catch up day".... I am going to be deep cleaning the kitchen, and straightening up the rest of the house. Then, if I have the energy, I'll be trying to get some errands run in town and start some new projects.
A couple of days ago, when I thought we were over it, I went ahead and made Apple Peel Jelly....which turned out so delicious! I found the recipe here. This recipe doesn't call for pectin (edited to add: Aha, I stand corrected! A commenter has let me know that somehow I missed it. It does call for pectin in the recipe. I'm such a scatterbrain. Duh!), but when I made it according to the directions, it turned out too runny after it was canned. So I had to take them out of the cans and re-can them, the second time adding a box of pectin. The second time around, it turned out perfectly gelled!
Here are the apple peels and cores I used (from the apples I cored for the Apple Butter)

I made a double recipe, and ended up with 9 pints. Here are a few of the jars...I think this jelly is a really pretty color:

The rest of the apple cores and peels that were leftover, I have left in a bucket, covered slightly with water. After fermenting for a while, it should become cider vinegar, which I can strain and use for cleaning or cooking.

1) Love your blog. I've been reading for several months, but don't say too much. :>)
2) I was very impressed with the way you handled the wine comment, but am saddened that we won't see how it turns out.
3) Maybe in your delirium, you missed this line in the recipe? "Gradually dissolve 1 box of pectin into the liquid and bring to a full rolling boil, over high heat." It's right before you add the 7 cups of sugar. :>)

If you do apple jelly with red apples, the jelly is a lovely pink color.

You are amazing. The jelly is beautiful and the apple butter looks mouthwatering! My husband and I are in the dreaming phase for our next house (we plan to build it), and so far, based on your blog, it needs to have peach trees, apple trees, blueberry bushes, and a very large garden.
Apparently I should also add a huge pantry to store all the canned goods I want to make!

You just amaze me. You even use the leftover parts of the apple to make jelly and cider. I love Apple jelly and apple butter. My mouth waters as I look at the pictures.
We have pear trees that are producing so much fruit. We are picking them but I have no idea what to do with the harvest. I do not have a canner or much freezer space but hate to let the fruit rot. I may have to invest in a canner so I can make pear butter.
Glad you and James are on the mend now. Being sick is no fun.

Something really easy and yummy to do w/the pears is dry them. We have the same problem w/our pear tree and this is something that lasts all year long. Set your oven @ 250 degrees (or "warm" setting). Chop pears in quarters. Place on cookie sheet and leave in oven 24 hours or until shriveled up and dry. Enjoy! I leave these out on the counter and the kids will have eaten them by the end of the day! A very healthy TREAT!

Mmmm that jelly sounds delish. What a great way to make use of the peels. It never occurred to me that one could make one's own apple cider vinegar! I've never known anyone personally who made it! It sure does have a lot of uses, though.

I was thinking about this today as I was working on apples - how did your vinegar every turn out? I'm not sure that would work som well for me to try . . . the apples I get usually have lots of critters and bad spots to cut out.
