Northern Bean Pierogi's
I just LOVE "Pierogi's" and can't stop making them. I have been experimenting with many different fillings. I tried a "sausage and cheese" mixture the other day. Wasn't all too crazy about that one though (just tasted like a sausage biscuit! lol), but it was okay.
Then, a couple of days ago, I thought it might be neat to try a bean pierogi.
So I cooked a bag of northern beans, with about 4 strips of bacon until the beans were very soft (a day in the crockpot does the job)... then, I got out a couple of cups of the beans, mixed them with salt, pepper, and garlic powder (to taste). Then I used the recipe for the pierogi dough (which you can find here), and put about 1 tbsp of the filling in each pocket.
If you try this recipe, you may want to keep in mind (this is important) to drain the beans before putting them in the pierogi pockets! The reason for this is that the beans are really moist and any liquid that comes out of them will cause the pierogi's to lose their seal before being cooked, and they will leak. I learned this the hard way. lol But, this filling was INCREDIBLE. Very tasty!!

I have to try pierogis sometime. They have been on my to do list for what seems like forever

lol...my whole familyloves them too! Especially my mom. I like mine more done. I like them nice and brown.
I thought of you yesterday, I saw this press thingee on tv. It crimps he edges of pierogies and raviolis I was like Bethany needs one of those!
I can't describe it. the next time I see it, I'll take a note for you!

FOUND IT!!! It was going to drive me nutso until I saw it. So I went and started typing different words I could think of! it's called a Dumpling press.

See how hard that was for me to come up for a word for it lol. I just saw it, I didn't see what it was called. I thought before I found it, I could have called it a juice, or garlic press thingee lol.
