Black Bean Soup

I made Black Bean soup the other day, and it was wonderful. It was spicy (I put a lot of pepper in it), and it had bold, delicious taste...it was so good I think I'll make it again this week.

I added about 2 cups of cooked rice to the recipe below (and left out the ham bone and lemon slices, as I didn't have them).

And I made some Italian Bread from scratch- I didn't really use a recipe, but it's similar to this one:

I will be trying to try out some Northern Bean recipes soon....I know someone requested recipes for those, but can't remember who.
Has anyone ever tried "Yellow eye" beans? I had never heard of them but saw them in the store the other day and bought two packs of it. I'll have to see if I can find a recipe for them and see how they taste.

4 thick slices bacon (chopped)
2 stalks celery (chopped)
3 onions (chopped)
1 lb. black beans (soaked overnight and drained)
1 ham bone
2 bay leaves
2 cloves garlic (pressed)
1/2 tsp. cayenne pepper
2 cans beef broth
6 cans water
Salt and pepper to taste
8 lemon slices for garnish
2 stalks celery (chopped)
3 onions (chopped)
1 lb. black beans (soaked overnight and drained)
1 ham bone
2 bay leaves
2 cloves garlic (pressed)
1/2 tsp. cayenne pepper
2 cans beef broth
6 cans water
Salt and pepper to taste
8 lemon slices for garnish
In
a heavy saucepan, saute bacon pieces until lightly browned. Add celery
and onions and saute for 3 minutes without browning. Add remaining
ingredients. Combine well and bring to a boil.
Simmer low about 2 1/2 hours, stirring occasionally. Remove meat from bone and discard bone. Cool the soup. Put through blender. Reheat and serve with lemon slices on top.

Mmmmm! We love black bean soup!!! BUT I have never made it. My mother-in-law makes it. She uses a recipe from America's Test Kitchen. I will have to try this recipe.

Your recipe sounds great for the black bean soup.I wish my crew liked beans so I could make it.

We have decided to follow your lead and try eating beans several times this week. We had some short ribs in the freezer so I just put some pintos, short ribs and onions in the crock pot last night and let them cook for about 15 hours and it turned out great. I don't love beans but the rest of my family does so I just make do

lol...so this is a funny question...but how do you and your husband avoid the gas that beans bring...lol - seriously though =p. I've been making more beans for us but have never been taught how - and they're gassy little foods =p.

A little trick I learned- Put a carrot in the beans while they're cooking. It will soak up all the gas, and then when the beans are done, throw away the carrot.
Don't let anyone eat the carrot or they'll be pooting all over the place!
