Burritos Again
I am planning to do this again once we get paid. It has been about 9 months since I made about 50-60 burritos at once, then froze them..
I made myself one day in the microwave. 1 minute on each side. It's almost the last burrito, and it tasted wonderful- as if I made it yesterday.

I love the recipe that the Maxwell's use for their burritos:

However, to make it more interesting, I'd like to change up the recipe a little bit for some of the burritos this time- maybe have 20 of one kind, 20 of another kind, and so on. That way no one gets bored with the same old burrito every time we get them out.
I am thinking about adding lots of onions and cheese to some of them. Some will have jalepenos, some won't.

It's so nice to have a delicious and quick snack or lunch like a burrito on hand... I think homemade ones are SO much better than the store bought burritos. And I'm sure they're much healthier too.
Does anyone have any ideas for other fillings? Your ideas do not have to have pinto beans...they can be any type of bean.
If you have any ideas, I will try them if I can. I will be sure to take pictures, and let you know how well they taste after being frozen.. Hopefully it'll inspire you to do the same thing.

I had a few ideas you could do chicken fajitas, like boil a whole chicken and shred chicken then put fajita sauce, onions, green peppers and cheese that sounds so yummy... Also you could do cubes of ham and cheese with onion! But I guess that isn't bean burrito but would be a fun burrito to eat. I like your ideas of adding onions and cheese. How about beans with salsa different kinds of salso. Wal-mart sells this black bean salsa it is their brand it is kind of sweet and very good that would be good to mix in with ground hamburger and beans. Also a thought is using different seasoning like buying a ranch season pack and season beans and hamburger with that and add cheese. YUMMY ok that is all for now!

Oh wait! I forgot the freezer paper...I'm not sure but it was probably 3-4 dollars.

That is an AWESOME idea!!! I don't know why, but out of everything that I've thought of to make and freeze, I had NEVER even thought of making homemade burritos!!! LOL Quick question, if you don't mind me asking, about how much does it cost you to make 50-60 burritos? I'm kind of thinking about doing the same thing when we get paid!

Autumn, I believe it was about 7.50 for 5 packs of 10 tortillas, 1.50 for the few jalepenos I bought, 3.00 for the beans, and 1.50 for three jars of chili powder (I buy the cheap brand from Walmart).
So all in all, it was about 14.00 total for everything!

I was thinking of chicken burritos too. Maybe add some cooked chicken, mushrooms, onions and some seasoning. Hey why not add potatoes and vegis and make it a pot pie burrito LOL. I'm going shopping on Thursday and I think I'm going to get the stuff and do that. I like buying the premade ones, but never realized I could freeze home made ones. I freeze everything else. LOL
BTW, I couldn't get the link to work. I'd like to find the recipe they use. My MIL makes home made burritos with beans, burger and cheese, than adds sour cream and tomatoes on top.

What a wonderful idea!!! I tried the titus link, but for some reason it was unable to connect. I will try again later. I am definately going to try this. It would be great for my guys for when I am working these 5 nights a week.

I love burritos!
I was just visiting around some "happily child free" sites and it made me think of you and I just wanted to say that you're a real inspiration to me. I mean you're a wife and mother and you still manage to do so many wonderful things, singing, painting, making burritos, etc... Honestly you're wonderful and I love being internet friends with you.

I have made homemade burrittos for years (I grew up on them). I use 1/2 bag of dry black beans and 1/2 bag of small red beans. Rinse and follow directions on how to cook them. I then drain the bean water into a separate bowl, mash the beans, add 1 pkg of taco seasoning and then slowly add the water back as needed to make a nice consistency of beans. I usually buy the premade mix in the mexican section at walmart of tortilla flour and just make my own shells (but that is a lot of work as my family eats about 32 of them at a sitting). But the mix is only 2.50 I believe. Then afterwards we add our own toppings. I have done this same thing with cooked chicken and it turned out good. The only thing with the chicken is buy the seasoning for chicken taco mix. This is a favorite of my kids and their friends.

We started doing this a few months ago. We like to get creative and throw in whatever we have! Beans, rice, corn or other veggies in the food processor, cilantro or avocado...My hubby couldn't believe how much $ we saved the first time! I can always win him over w/our savings if the homemade taste didn't already get him =) Never thought of just doing some bean ones though. The variety would be a good idea. Breakfast Burrittos are delicious. When I make them I do scrambled eggs, cheese, white gravy, sausage, and tater tots. It is a great weekend breakfast. shelly

Make-your-own frozen burritos- what a GREAT idea! I may have my kiddos help me do this soon. The only difference is we'll need to make a couple hundred as we have 9 in the family. 60 would be gone pretty fast. ;0) We go through between 15-20 in one meal. LOL!

I made some chicken ones tonight, oh my were they yummy. I'll post some pictures on my blog, but here's how I made them.
3lb boneless, skinless chicken breast
boiled with some seasoning, than cut into small pieces.
I cooked 2 onions and some peppers in the fry pan, than added the chicken and a can of mushrooms, stirred it up and fried it a little. I than added 2 pkts of chicken taco seasoning, instead of water I used the liquid from the mushrooms and broth from the chicken.
Simmered it all and put it in the shells. I added cheese to it and folded them. We of course had to try some,I put them in the oven 350 for 15-20mins and topped them with lettuce, tomatoes and sour cream. The kids loved it and I'm ready for another!

Have you tried making tamales before? This blog entry made me think about trying them again. I made them once but didn't have the best of luck. I know they freeze well so I might try them again, if not I will have to do the burritos! Thanks
