Bacon Wrapped Chicken Stuffed with Cream Cheese

I was looking for something to make last night..and I stumbled on this delicious recipe.   Now, if you're looking for something healthy and non-fatty...well, this might not be the recipe for you.   But it is SO amazing!

Bacon Wrapped stuffed Chicken



This is a very simple recipe...

4-6 chicken breasts
Bacon
Cream cheese

Instructions:
Pound the chicken with a mallet, until it's nice and soft.  Don't puncture it though.  
Open the breasts, and spread cream cheese over them.  (this sounds easy, but it's actually rather difficult and messy!)
Close the chicken breasts by rolling them up again...and then wrap them in 2-3 slices of bacon each.
Put in the oven for 40 minutes, or until the chicken is cooked thoroughly.

Delicious!!

    Bethany, I have seen these at grocery stores, well something similar. you should try putting cheese and chopped up Jalapenos inside the chicken breasts! It is soooo yummy and not to spicy either. They taste really good on the grill too. The grocery store that I've seen them at call them chicken grillers.. they are yummy.
