Lots of Burritos!

About a week or two ago, Carol was kind enough to refer me to a great recipe from the Maxwell Family, for a large number of burritos to freeze and reheat.

Because my family is not nearly as large as the Maxwells, I split the recipe in half.

Two days ago, I cooked about 14 cups of pinto beans...stored them in the fridge till last night. Last night, I took them out, smushed them all up (with a mixer), and cooked the correct amount of onions and jalepenos to go in them.   

Into one large bowl went about 1/3 of the beans, which was the spicy kind with the jalepenos.   The other bowl contained 2/3 of the beans, and this kind only had onions and the spices. 

Once all of the stuff was mixed in, I got the freezer paper out that I had bought,cut pieces out and laid them on top of each other, to save time....and I  cut the freezer tape into little strips to save time as well (you can see them all along the side of the table in the picture below).  



It was very easy and quick rolling the burritos and wrapping them in the freezer paper. Within 10 minutes, I had about 30 burritos wrapped:



Unfortunately, I ran out of tortilla wrappers!  I have to go to the store today to buy about 60 more of them....That's about how many more burritos I have left to wrap!
I wrote "S" on all of these burritos to let us know they are the spicy ones.   I'm pretty sure the kids wouldn't like to get ahold of one of the jalepeno ones!

Here, we fold up the bottom, and then the two sides over, leaving the top open. You guys, encase the whole thing closed... and I can't work out how to do it so that it stays closed!! I admit there is a slight difference in the texture of the flour tortilla when it is reheated from frozen, than if you just made it and cooked it right away. However, it's just a slight difference, and not a big deal. I love the taste of this filling...can't get enough of it! It's perfect with some cheddar cheese and sour cream also.

    The freezer paper works amazingly well! It has a plastic coating on one side,...that's the side you put the food on, and then the other side is just paper. I think it works just as well as a plastic bag, but it couldn't hurt to put it in a bag too, if you want to!
