As promised- Once a Month Cooking pictures!
Well here they are! Keep in mind that most of these are uncooked, therefore they are not as pretty as they will be after being cooked!
I was not able to get all 30 meals finished today, however I did manage to finish 23, and am planning to do the last 7 tomorrow!
You'd be surprised how much energy and time it takes to do each dish. I wish there was somehow a way for me to do several dishes at once. lol The best I'm able to do is two at once so far.
Here are the cinnamon buns the kids and I had for breakfast this morning..they were so yummy!
What a great way to start the morning!

Chicken Enchiladas were the first thing I made yesterday to get things started.... the cheese and tortillas are in separate ziplock bags.

Next I made three dishes of South of the Border chicken bake, but was feeling too sick to take any more pictures.
And today, this is what I made:

Then came Fajitas:

Next was Crab Casserole (I actually had a bit of a mishap with this one...the entire pot of food when it was almost finished was spilled onto the floor, and I had to restart from scratch! Ack, that was no fun!) :

Closeup of the crab casserole:

Next was Asparagus Casserole:

Next, Asian Curry...this time I decided to freeze the rice uncooked in a separate bag, and cook it when the time comes...last time, the rice actually soaked up all the liquid in the meal and made it kind of dry, even though it was really delicious. I think it'll be better this way.

I made two of them:

Next up was Zesty Italian Casserole...and even though it might not look beautiful right now, believe me, this is one of the family favorites! It is delicious!! Once cooked, it looks prettier too.

Next was Chicken and Dressing (enclosed in the bag are also 3 cups of chicken broth to pour over the dressing):

Chicken Teriyaki wings....these were very simple...just mix the ingredients and throw them in the bag! I think they are going to taste great:

Then came Tater Tot Casserole (Tried it before and it's really good!):

Salmon Casserole....

Crockpot Chili......

And finally, broccoli, ham, and cheese casserole....

And tomorrow I'll be busy cooking some more, after church is over!
Remember, the recipes to all these dishes can all be found here.

You can cook the rice ahead of time and freeze it in it's own bag. I like to brown some chopped onions and mix them into the brown rice...tastes great!!

Hey Bethany,
I was browsing the web looking for budget friendly recipes and somehow I stumbled upon your blog here. Who knew the Internet could be such a small place, because I keep finding you everywhere LOL. In case you don't remember me: we first met at babies-on-line when I won one of your portraits, then we met again on Artpapa.com where I used to post my art work. I guess we share a lot of the same interests. It's nice bumping into you again!

Oh my goodness!!! I can't believe it...that is too much of a coincidence! I am so amazed lol
How have you been doing lately? I hope well!
Have you still been drawing? I think I have lost the URL to your homepage...I'd love to visit it again and see what new work you have done!

Hey again Bethany,
I haven't been drawing although I know I probably should be. I've been trying to get inspired. How do you keep yourself motivated to draw? I can't imagine where you find the time with so many little kids and all the cooking too! You amaze me with your bulk cooking. I'd like to try it, but it looks like a lot of work. I'm trying to cut our food budget which is currently $800 a month. That's for a family of four with a teenager and 5 year old. I realize this is way too much to be spending on food! I'd like to be spending at least half that.
Here's the URL for my artwork.

Do you have a deviant art account? I'd like to add you to my watch list if you do.

Hi Bethany!
Just got this from my SIL Bonnie.
You drew 2 pictures for me, love your work. So proud to see that you have it together as a mom, and artist, and a cook!
