Once a Month cooking put on hold

I haven't given up on Once a Month cooking, but I won't be able to do it again for another month.    This month, I really need to save as much money as I can and spend as little as possible on groceries. We'll be eating a lot of beans and cornbread, and lots of rice.      James won't be paid for another month because while he was home on disability leave, his company made a mistake and paid him twice when he wasn't supposed to get money...we didn't realize it was a mistake, but they just found out last week and decided not to pay him for a month!    
But this is a challenge for us.  Time to be creative and see what I can do with the money we do have!
I found a recipe for some black bean soup that sounds delicious.   There's all kinds of stuff you can do with potatoes and eggs too!
